Leonard Maltin may suggest Gorgo for Mike and the ‘Bots but I suggest a recipe based on it for St. Patrick’s Day. You don’t need to be a treasure hunter to get this good of a recipe. Here is my recipe for corned beef and cabbage with vegetables in the slow cooker.
- 4 Carrots (peeled and matchstick)
- 10 Baby Red Potato
- 1 Onion (diced)
- 1 (4 pound) Corned Beef Brisket with Spice Packet
- 6 ounces of Beer
- 1/2 cup Cabbage chopped
Now to transport your monster to an amusement park!
- Place the carrots, potatoes, and onion into the bottom of a slow cooker.
- Pour in the water.
- place the brisket on top of the vegetables.
- Pour the beer over the brisket.
- Sprinkle on the spices from the packet, cover, and set the cooker on High
- Cook the brisket for about 8 hours.
- An hour before serving, stir in the cabbage.
- Cook for 1 more hour.
- Once cooked through shred corned beef like pulled pork. (Just like tearing down London in a Godzilla rip-off suit.)
There you go! You’re ready to escape from the circus or enjoy a great St. Patrick’s Day meal! Enjoy!
